What Is Biryani?

Biryani is a layered rice dish: partially cooked basmati and a spiced meat curry are stacked in a pot and finished together over low heat (a technique called dum), so the rice steams in the aromas of the masala below. It's the technique — the layering and the slow steam — that separates biryani from ordinary spiced rice.

Biryani vs Pulao — What's the Difference?

They look similar but they're built differently. Pulao (pilaf) cooks the rice and meat together in one pot, in a measured amount of broth, for a milder, uniform flavor. Biryani layers separately-cooked components and is bolder, spicier and more aromatic. If it's vivid, layered and assertively spiced, it's biryani; if it's gentle and cooked as one, it's pulao.
